Pear Mt. ( Lii-Shan)
with Deep Fermentation and Dark Roast
Made with crushed pieces (not powder!) of tea leaves harvested
at high Elevation Pear Mountain (over 2200M). Because
of its small surface and is generally taken from the edge
of the fermented whole leaves, its fermentation rate reaches
an average of 50%. Becuase the expensive price of the
raw leaves, The Pear Mountain Tea is rare to be processed
with such a high fermentation percentage. Therefore these
tea sachets are really rare pearls that worth a try!

What
is traditional Tung Ting Oolong? This is the one - the one
we had dreamt of its renaissance for many years.
The current Taiwanese tea development prefers to produce greener
and greener high mountain Taiwan Oolong; more similar to green
tea. Green style oolong is light and refresh, presents delicate
and fragrant aroma. However, if you love Tung Ting oolong,
you must try our "Legend of Tung Ting", at least once for
the image of original Tung Ting oolong. This tea is not "light"
at all. It is ripely floral, fruity, even a bit honey-like,
accompanying with rich classic Tung Ting oolong palate. The
rich taste does not come from strong roasting process but
the traditional fermentation one which is a disappearing art
requires sophisticated technique and years of experience.
Soon after we made the decision of reproduction of "Legend
of Oolong", the news spreaded quickly among producers. Some
highly respected senior producers voluntarily came to direct
and gave suggestions. During the process, many farmers, producers,
and wholesaler gathered around to observe, even though it
was after midnight already. After the raw leaf process was
finished, we roasted it further to polish the body and palate
of brew into the best balance.
Sounds really like a legend, right? When you drink this tea
and scream "WHAT A TEA!!!", again, it is the glory
of Tung Ting Oolong. |

Very mild, sweet, recalling the taste of fine
Pu-Erh tea, but just combined the excellence
of oolong tea!
The appearance of this tea is quite tiny,
since it is only made with the buds
of oolong plants. It is not the sort
of "gunpowder" or "pearl tea",
while those teas are made with broken tea
leaves.
Aging oolong tea requires repeated roast at
least once every year, this makes aged oolong
tea differ from Pu-Erh Tea. There will never
have musty smell in aged oolong. And a aged
oolong doesn't have limitation of "best
before". You can continue aging it by
store it in a suitable condition.
The caffeine and other stimulating contents
in aged oolong are far lower than regular
oolong. This made it a mild tea which would
hardly cause sleeping problem or stomach irritation.It
also has many healthy benefits which similar
to Pu-Erh Tea - aiding in cancer prevention,
reducing high blood pressure, reducing bad
cholesterol in the blood, and boosting immune
system.
Because the buds are always have most taste
in all leaves, we suggest reducing the amount
of dry tea to 2/3 or 3/4 when brewing it.
If you are just started drinking Taiwan oolong
tea, we may suggest taking a medium roast
